Ingredients:
- 1½ cups gluten-free oats
- ¼ cup raw honey
- ¼ – ½ tsp Himalayan Pink Salt or Real Salt (adjust based on taste)
- 7 Tbsp ground flax seeds (Phase 1) or sesame seeds (Phase 2)
- 7 Tbsp ground pumpkin seeds (Phase 1) or sunflower seeds (Phase 2)
- 1 cup peanut butter or other nut butter
Optional Ingredients:
- Raw, unsweetened cacao nibs
- Reduced sugar dried cranberries
Directions:
- Combine dry ingredients in a mixer bowl
- Add wet ingredients and mix well
- Line a baking sheet lined with unbleached parchment paper
- Roll dough into 1-inch balls and place on baking sheet
- Place the baking sheet in the freezer and freeze at least 2 hours
- Once frozen, enjoy 3 balls per day for each Phase. Store in glass containers in the refrigerator for immediate use and store extras in the freezer for future use.
- Makes 21 balls, which is a 7-day supply
